Thair Sadam

Thair Sadam basically known as Curd Rice, in any of our South Indian Thali, Curd rice is must. Mainly in Andhra Pradesh they feel without curd rice the meal is incomplete. Lemon pickle and Mango Pickle taste good with this dish.

Ingredients for Thair Sadam

  • Rice 250 gms
  • Mustard seeds 1 tsp
  • Chana dal 1 tsp
  • Ginger a small piece (chop finely)
  • Red chilli 2 No’s
  • Curd 400 ml
  • Curry leaves 1spring
  • Coriander leaves 2 springs
  • Oil
  • Salt to taste

Preparation of Thair Sadam

  • Wash the rice soak for some while.
  • And cook well till it’s done, pour some more water while cooking.
  • So the rice will be cooked more soft, and it’s easy to mash.
  • Mash the rice, while it is hot only. And keep it aside for cooling.
  • Heat the tava add oil, mustard seeds, chana dal, ginger, curry leaves and red chillies.
  • Sauté for some time and pour on smashed rice.
  • Fine chop coriander and add to the mixture.
  • Know add curd and salt and mix well.
  • Serve with lemon pickle or mango pickle.
  • Asafoetida is optional.

One more method of preparing Thair Sadam.

Basically, this method is followed in many of villages in South India, mainly in Andhra and Tamil Nadu region.

The rice will be cooked in the night and kept, and in the early morning they will smash the rice and add curd and salt to the rice and mix well, here more seasoning will not be done, it will be of plain curd rice. And if require we can add seasoning.
