Mixed Vegetable Kurma

Mixed Vegetable kurma can be made in many ways. Use mixed vegetables of your choice to make this dish. Select from shelled peas, Yam, Potatoes, Pumpkin, French beans, cauliflower, carrots, raw plantains etc. (if using yam, plantains or sweet potatoes, it is advisable to lightly sauté or fry them in oil before using).

Ingredients for Mixed Vegetable Kurma

  • Peas 100 gms
  • Potatoes 100 gms
  • French beans 100 gms
  • Cauliflower 100 gms
  • Carrot 100 gms
  • Oil 3 tbsp
  • Onion 3 No’s
  • Green chillies – 3-4 No’s
  • Garlic 6-7 cloves
  • Ginger small piece
  • Bay leaf 2-3
  • Cardamom (split) 2 No’s
  • Cinnamon small piece
  • Cloves 4-5 No’s
  • Tomatoes 2 No’s
  • Turmeric powder ¼ tsp
  • Red chilli powder 1 tsp
  • Coriander powder 1 tsp
  • Poppy seeds 1 tsp
  • Ground coconut 2 tbsp
  • Salt to taste
  • Water 1 ltr

Preparation of Mixed Vegetable Kurma

  • First clean, wash and cut all the vegetables in to dice.
  • Heat oil in a medium flame and add bay leaf, cinnamon, cardamom and cloves. And stir fry for a min.
  • Later add chopped onions, green chillies and fry for some while, and add ginger garlic paste.
  • Then add tomatoes mix well, and let it cook for some while, till the onions get its golden brown colour.
  • And add turmeric powder, red chilli powder and coriander powder and stir well.
  • Know you may add ground poppy seeds and coconut for thickening the gravy.
  • Add salt to taste.
  • Cook till the gravy is done. Then add all vegetables and stir-fry for 5 minutes.
  • Add water and let it come to a boil, then reduce heat and simmer for 20-30 minutes till the vegetables are tender.
  • Mixed Vegetable Kurma goes good with roti and pulav items. This dish is preferred mainly in bulk cooking.
