Kesar Rice

Kesar Rice is a type of preparation with less spicy and rich look with kesari (saffron) colour. The rice is cooked purely in ghee.

Ingredients for Kesar Rice

  • Basmati rice 250 gms
  • Ghee 2 tbsp
  • Saffron 1 grm
  • Milk 100 ml
  • Turmeric powder ½ tsp
  • Salt to taste

Preparation of Kesar Rice

  • First wash and soak rice for 15 to 20 minutes.
  • Drain water and mix turmeric powder in to rice before cooking.
  • Then in a cooking pan add rice and salt and cook in a medium flame.
  • When rice is just done, drain out the water and let the rice simmer.
  • Roast the saffron over a small tava for one or two minutes, till it becomes hard.
  • Crush to the powder in a small grinding stone.
  • Add this saffron to milk and dissolve properly.
  • Heat ghee in a big flat pan, add the rice to it.
  • Cook the rice in the ghee for four to five minutes and then add the saffron and milk.
  • Finally cook the rice in a slow flame around 7 to 8 minutes and serve hot.
