Cauliflower Pulav is pure vegetable based rice dish, with less spicer, rich look and taste good with Vegetable kurma and Raitha.

Cauliflower Pulav

Ingredients for Cauliflower Pulav

  • basmati rice 250 gms
  • butter 50 gms
  • cauliflower 250 gms
  • salt to taste
  • black pepper powder ½ tsp
  • red chilli powder ½ tsp
  • onions chopped 2 No’s
  • garlic chopped 10 cloves
  • cinnamon 1 tsp
  • cloves 6 No’s
  • ginger 1 tbsp
  • green chillies 3 No’s
  • cumin seeds 1 tsp
  • coriander powder ½ tsp
  • water 450 ml
  • sour cream 2 tbsp

Preparation of Cauliflower Pulav

  • First wash rice thoroughly and soak it in water for ½ hour.
  • In medium flame heat butter, fry cauliflower with red chilli powder, pepper powder until it is half cooked.
  • Remove cauliflower from butter and fry onion and garlic in the same butter.
  • Add cardamom, cinnamon, cloves, rice, and fry for some while.
  • Add fried cauliflower springs, sliced ginger, green chillies, salt, cumin seeds, and coriander powder.
  • Continue to fry, add water and sour cream and mix the same.
  • Cover and cook until all water evaporates.
  • Finally garnish Pulav with sliced onion, cucumber, tomatoes, and toasted almonds.
