Ingredients for Spicy Ginger Pulao

  • Basmati rice 500 gms
  • Ghee 2 tbsp
  • Onion 1 No
  • Ginger 100 gms
  • Cardamom 5-6 No’s
  • Cinnamon small piece
  • Cloves 7-8 No’s
  • Sugar 100 gms
  • Water 1.2 ltrs
  • Lime 1 No
  • Saffron coloring
  • Salt to taste
  • Nuts 2 tbsp

Preparation of Spicy Ginger Pulao

  • First soak the rice in water for around 15 minutes.
  • Parallel smash ginger, cardamoms, cinnamon and cloves together.
  • Add water and sugar.
  • Boil until the stock is reduced.
  • Squeeze the lime and keep it down to cool.
  • Strain the syrup and keep aside.
  • Heat ghee and fry the chopped onion, now add the prepared stock, rice and coloring.
  • Cook on medium fire, adding salt to taste.
  • As soon as rice is cooked, cover and keep it down.
  • Shallow fry the nuts in the remaining ghee.
  • Finally serve hot garnished with nuts on top.
