Navratan Korma a rich and flavorful Mughlai dish, which is made with nine variety of vegetables, added with lot of cream and nuts.

Ingredients for Navratan Korma

  • Onion 2 No
  • Peas 200 gms
  • Beans 200 gms
  • Carrots 200 gms diced
  • Capsicum 100 gms
  • Cauliflower 100 gms
  • Paneer 100 gms
  • Mixed nuts 50-75 gms (cashew, pistachios, almonds)
  • Cumin seeds 1 tsp
  • Red chilli powder 1 tsp
  • Cream 150 ml
  • Coconut milk 500 ml
  • Tomato small 2 no’s
  • Ginger 1 inch piece
  • Garlic 6-8 cloves
  • Green chillies 6 no’s
  • Salt to taste
  • Oil 1 ladle
  • Cinnamon 1 no
  • Cloves 4 no’s
  • Coconut 2-3 tbsp grated
  • Water 500 ml

Preparation of Navratan Korma

  • Wash and cut all the vegetables.
  • Boil all the vegetables except onions and keep separately.
  • Swallow fry the nuts till golden brown and keep aside.
  • Cut the pannier in to cubes and fry both sides and keep aside.
  • Make a paste of coconut, tomato, garlic, ginger.
  • Then heat deep fry pan in a medium flame, add oil and sauté cinnamon, clove and cumin seeds.
  • Then add onions and fry till golden brown.
  • Add green chillies and masala paste and cook for some time.
  • Later add coconut milk, fried nuts, and pannier to the mixture and mix well, and add all the cooked vegetables.
  • Add water and boil, till the gravy is completely mixed with vegetables and add salt to taste.
  • Then later remove from flame and add cream to the mixture.
  • Garnish with some chopped coriander leaves, and serve hot.
