Mixed Vegetable Kottu – is a type of thick gravy cooked with all type of vegetables along with dal, taste good, it is used as an alternate to sambar. This type of dish is preferably done in bulk cooking.

Ingredients for Mixed Vegetable Kottu

  • Peas 100 gms
  • Cabbage 100 gms
  • Carrot 100 gms
  • Potato cubes 100 gms
  • Beans 100 gms
  • Moong dal 150 gms
  • Turmeric powder ¼ tsp
  • Coconut ½ No
  • Red chillies 2 No’s
  • Curry leaves 1 spring
  • Cumin seeds 1 tsp
  • Urad dal 1 tsp
  • Mustard seeds ½ tsp
  • Salt to taste

Preparation of mixed Vegetabble Kootu

  • First clean and wash all the vegetables.
  • Fine chop all the vegetables.
  • Pressure cook dal with salt and keep aside.
  • Boil all the vegetable along with salt.
  • Grind coconut, cumin and chillies to a fine paste.
  • Mix cooked vegetables, dal and fine paste add little water and simmer for five minutes.
  • Heat a pan to a medium flame add oil, mustard seeds, curry leaves and urad dal.
  • Finally season on top of the Kootu, and serve hot.
