Brinjal Curry

Brinjal curry – It’s a pure South Indian Vegetable curry, which is been served along with Mutton Biriyani. Except Brinjal curry, no other Vegetable curry goes good with Biriyani items. In English we name it has Eggplant, Brinjal can be added to make any kind of dish, it can be added in Dal recipes, vegetables recipes, eggs and non veg. In coastal area many people like to eat Brinjal with dry fish.

Brinjal curry

Ingredients for Brinjal curry

  • Brinjal 250 gms
  • Onions 2 No’s chopped
  • Ginger 1 tsp
  • Garlic flakes 4 No’s
  • Green chillies 2 No’s split
  • Curry leaves 1 string
  • Mustard seeds 1 tbsp
  • Turmeric powder ¼ tsp
  • chilli powder 1 tsp
  • Jaggery a small piece (optional)
  • Tamarind 1 tbsp
  • Oil 4 tbsp
  • Salt to taste
  • Water 250 ml

Preparation of Brinjal curry

  • First wash Brinjal and cut in to large pieces,
  • Secondly Grind ginger, mustard seeds, garlic, green chillies, curry leaves and turmeric powder. And keep aside.
  • Heat oil in vessel, add fine chopped onion and fry till it turns to golden brown.
  • Aslo add ground masala, water, and add jaggery when water boils (optional).
  • Cook for some while.
  • Add brinjal and Simmer till gravy thickens. Add pulp of tamarind.
  • Mix thoroughly. Remove from fire.
  • Heat some oil in a vessel, fry sliced onions till golden brown.
  • Finally add oil, pour curry into serving dish. Garnish with fried onions.
  • Serve hot with poories and chapathies.

Note

  • Use tender Brinjal for making curry.
  • Don’t keep the cut Brinjal for more time, it will change the colour.
  • Try to keep in water with salt after the Brinjal is cut, So it will  retain its colour.
